Chives are related to onion and have a very similar taste. They grow more easily and abundantly, so they make a great onion substitute for home culinary gardens.
Storage
Store chives in an unsealed bag in the fridge for a week or more.
To dry, place them on a towel in a sunny spot with good air flow (like in front of a window). When they’re completely dry (this could take a few days or a few weeks, depending on humidity), crush them and store in an airtight container indefinitely.
Cooking with Chives
Chives are best raw, so if you don’t have an onion, just chop up lots of chives and add them to your meal at the end!
