Quick Radish & Carrot Teriyaki
Adapted from 'Good and Cheap' by Leanne Brown
Great with other vegetables or scaled up!
1 tsp. olive oil
1 small red onion
1 tsp. brown sugar
2 Tbsp. soy sauce or tamari
1 clove garlic, chopped or pressed or grated
2 cups carrot, grated, about 4 medium
1 cup grated Daikon radish
garnish with green onion and/or crushed red pepper
Heat olive oil at medium in a frying pan. Add onion when hot and cook for ~5 minutes.
Add brown sugar, soy sauce, and garlic and stir for about a minute. Add carrots and radish. Cook for 2 more minutes. Eat by itself or on rice.
