Egg Roll in a Bowl

Use any CSA veggie that you’d like in an egg roll! Just be sure to cook each one long enough: add harder veggies like carrots and onions right away, then soft ones like summer squash and mushrooms, and greens at the end.


1 pound ground sausage
½ cup soy sauce
5 cloves garlic
½ teaspoon ground ginger
3 cups finely chopped veggies


In a large, deep skillet, brown sausage. Meanwhile in a small bowl, combine garlic, soy sauce, and ginger; set aside. Once sausage is cooked through, add veggies to skillet and stir, continuing to cook over medium heat for about 5 minutes or until veggies are wilted, but still a bit crunchy. Serve with fresh herbs like cilantro, basil, or green onion, as a garnish.
