Tabbouleh
This is more of a template than a recipe. Use it as inspiration, and mix and match your veggies and herbs!
Allow for extra time if you want to serve it chilled.
Ingredients
Grain such as bulgur wheat, millet, wheat berries, or quinoa
Tomatoes
Cucumbers
Onions
Garlic
Fresh herbs like parsley, mint, cilantro, oregano
Any other veggies, such as peppers, kohlrabi, summer squash, mushrooms
Lemon juice
Olive oil
Salt
Pepper
Directions
Cook the grain according to directions. Meanwhile, chop the veggies to the size and shape you like. Mix all ingredients to taste, and serve warm or cold. Proportions aren’t very important, as long as you like the outcome.
Alternatively, leave the ingredients in the fridge separately so you and your household can each try different variations throughout the week!
Try adding meat, cheese, or nuts to make it a little more substantial, if you’d like. This is a great way to learn how to make a grain salad you really like, even if it ends up completely different from traditional tabbouleh!
