Potatoes are one of the most versatile vegetables, very starchy and ready to take on whatever flavors you want to combine it with. They come in white, brown, red, yellow, and purple!
Storage
Potatoes will store for several months in a cool, dark, dry place. Be sure they aren’t blemished, as one spoiled potato could ruin all stored with it. If it’s blemished, just use it as soon as possible, discarding the blemish.
Cooking
Potatoes are best eaten cooked. They can take a while to cook, so if you’re adding them to another vegetable dish, do so early on, just after the onions and garlic. They often reheat well, so make them ahead if you’re preparing a big meal! Just be sure to allow plenty of time to reheat, as that can take a while as well.
Recipes
- Try any veggie stir-fry and eat it with mashed potatoes instead of rice.
- Roast them with olive oil, salt, pepper, and fresh herbs if you’re feeling fancy.
- Slice them thinly and add them to a curry or soup.
- Don’t forget the classic mashed potatoes! I like to add whole garlic cloves when boiling, then mash them up right along with the taters.
