Great way to use a lot of cucumbers, and enjoy them!

This is even better the next day after the flavors get a chance to soak into the cucumbers. A great potluck dish! It’s a good relish or a dish on its own.
sliced onions (Red adds color. I prefer sweet Vidalia.)
In an appropriate sized bowl, stir water, vinegar, and sugar until sugar dissolves. Add sliced cucumbers and onions, making sure they’re covered by the brine. Cover and refrigerate at least 2 hours. The longer this marinates, the more enhanced the flavor.
Optional additions: Crushed garlic or dill to taste.
