Leek Frittata

Try this with different veggies or seasonings!


2 Tablespoons butter
2 Tablespoons olive oil
6 eggs
1/3 cup creme fraiche, sour cream, or plain yoghurt
4 leeks
1 teaspoon grated lemon rind
1 teaspoon dried or 1 Tablespoon fresh oregano
1 teaspoon dried or 1 Tablespoon fresh rosemary
1 cup grated monterey jack cheese
salt and pepper to taste


Slice leeks. Saute until soft in an ovenproof pan in butter and olive oil. Meanwhile, beat eggs with cream, salt, pepper, and seasonings. Add to pan with leeks and cook over medium heat for about 5 minutes, until underside is golden brown. Sprinkle cheese on top and place under the broiler for a few minutes. Slice and enjoy!
