Cucumbers are a cucurbit, related to summer and winter squash, and melons. They are light, fresh, and crispy, best eaten raw.
Storage
Fresh cucumbers will keep for a couple of weeks in an unsealed bag in the fridge, or a few days on the counter. The best way to keep them longer is to pickle them.
Cooking
Cucumbers are great in any salad, as the main vegetable, or added to your favorite salad. They’re also good sliced up for dipping in hummus or other sauces. Cucumber slices also make a tasty addition to cold drinking water, to make it extra refreshing!
