Crock Pot Gumbo

Serve with rice or bread to cut the spice.
2-3 pounds boneless skinless chicken thighs
1 pound shrimp
1/2 pound sausage, cut into rounds
1 diced bell (sweet) pepper
1 diced onion
2 diced celery stalks
4 cloves garlic
2 bay leaves
1 cup okra
6 ounces tomato paste
15 ounces (2 cups) diced tomatoes
1 heaping Tablespoon cajun seasoning
1/2 teaspoon pepper
1/2 teaspoon cayenne
1/2 teaspoon thyme
1/2 teaspoon oregano
Place all ingredients in a crock pot and cook on high for 6-8 hours, or until chicken is cooked through.
